What You'll Need:

- Hot water (just off boiling, around 200°F or 93°C)

Instructions:

1. Prepare the Filter:
- Open a Chemex bonded filter and place it in the brewer with the thicker side (3-layer portion) lining the spout. Rinse the filter with hot water to preheat the brewer and remove any paper flavor.

2. Measure and Grind Coffee:
- Weigh out 42 grams (about 6 tablespoons) of coffee beans for a 700ml brew (adjust coffee amount to your taste and Chemex size).

3. Pre-wet the Coffee:
- Pour enough hot water (about 100 grams or ml) to saturate the grounds evenly. Let it bloom for 30-45 seconds. This allows the coffee to de-gas and ensures even extraction.

4. Begin Pouring:
- Start pouring water in a slow, circular motion, starting from the center and moving outward. Pour in stages, adding water until you reach a total of 700 grams (ml) of water.

5. Control the Pour:
- Aim to keep the water level consistent, allowing the coffee bed to settle slightly between pours. The total brewing time should be around 4 minutes.

6. Final Steps:
- Once you've poured all the water, let the Chemex finish draining. This should take about 30-45 seconds after the last pour.
- Remove the filter carefully, dispose of it, and give the Chemex a gentle swirl to mix the coffee.

7. Serve and Enjoy:
