Mapache Estate from El Salvador presents a clean, well balanced cup with medium body and mild acidity.
The folks at Mapache have done some serious work to make sure that their coffee forests and employees are taken care of. Carlo and Sofia Handtke manage the estate and to their credit they have been able to limit the amount of waste water form their wet mill, ensure that every farm has a canopy protecting the coffee plants, and they hire over 125 locals year round and up to 600 during peak harvest season.
